Ben Tish's Vanilla Ice Cream with Raisins, Sherry and Chocolate

- 8 scoops of high quality vanilla ice cream
- 100g raisins
- 125ml Pedro Ximinez sherry
- 75g 70% bitter chocolate, finely grated
- Grated zest of half a lemon
Warm the sherry in a small pan and add the raisins. Leave for 15 minutes to cool and soak up the sherry.
Place the ice cream in serving coupes and then spoon over the raisins and PX syrup. Finish with some grated chocolate, lemon zest and serve.
