Baking Bothers: Homemade Marshmallows

Q. I really want to make marshmallows at home but all of the recipes I’ve seen use an electric stand mixer which I don’t have. Can I still do it?

Bea Vo says: If you have the arms of an Olympic discus thrower you could definitely do it by hand - but I wouldn't recommend it otherwise.

If you have a friend and an electric hand-mixer you could do it; your friend can hold the bowl and the mixer and you can slowly pour the sugar in, drops at a time, until it gets nice and foamy and then you can add the sugar in a stream. If you add the sugar in all at once you'll end up with a rock hard lump of sugar at the bottom.
