Baking Bothers: Quick Desserts

Q. I always have guests telling me they’re coming over at the last minute. What’s a quick and impressive dessert I can make?

Edd Kimber says: It really depends on the occasion. For a relaxed evening, a simple brownie sundae is a firm favourite. Make your favourite brownie recipe and serve with a scoop of ice cream, chocolate sauce and chopped pecans.

The brownies take no more than 10 minutes to make and then around 30 minutes to bake so perfect for those last minute occasions. For something a little bit more refined, a classic apple galette is nice and fast to whip up. Make a classic sweet shortcrust pastry and roll out into a thin circle. Pile sliced apples in the middle of the pastry with a little sugar and cinnamon and then fold the edges of the pastry over the apples and bake until the pastry is golden - delicious!

Lotte Duncan says: My Chocolate Mess recipe – assembled from store cupboard ingredients, made in minutes and guaranteed to make grown men weep with joy when they eat it!
