Baking Bothers: Soggy Cakes

Q. How do I mend a soggy cake? It appears cooked on the outside but when cut, is heavy in the middle.

Lotte Duncan says: A soggy cake is usually an undercooked cake. You need to test the cake when the required amount of cooking time has finished. Do this by gently pressing the middle of the cake and if it springs back it’s cooked. Or, gently push a skewer into the middle of the cake and it should come out clean. If it has some runny cake mixture on it, it’s not cooked and therefore needs a bit more time in the oven.
