Simple Caesar Salad
Delightful in its simplicity, try this version of the Italian-American classic.
- 1 large egg yolk
- 60g croutons
- 1 cos lettuce, torn into pieces
- 25g Parmesan cheese, shaved with a vegetable peeler
- 5 tbsp olive oil
- 4 to 5 anchovy fillets
- 2 tsp Worcestershire sauce
- Juice of half a lemon
- 1 large clove of garlic, crushed
Puree minced garlic and anchovies, lemon juice, Worcestershire sauce, salt, pepper and egg yolk; with machine running, slowly add olive oil.
Toss with romaine; top with parmesan and croutons.
