Crushed Root Vegetables
- 3 medium carrots, peeled and diced
- 1 large swede, peeled and diced
- 3 large parsnips, peeled and diced
- 1 vegetable stock pot
- 250g Carnation Cook with it!
Place the vegetables in a medium saucepan and cover with cold water. Bring to the boil for 15 minutes until the vegetables are soft.
Strain off the water and add the stock pot. Pour over the Cook with it! and crush. Ensure your vegetables are piping hot before serving.
