Tabasco Quesadillas with Guacamole and Mango Salsa
A quick and easy way to satisfy your spicy cravings.
- 1 tbsp oil
- 8 flour tortillas
- 200g grated medium cheddar
- Bunch spring onions, chopped
- Tabasco® Red, Chipotle or Green*
- For the guacamole
- 3 ripe avocadoes, mashed
- 1 tomato, deseeded and finely chopped
- 1 small red onion, finely chopped
- 1 red chilli, deseeded and finely chopped
- 1 lime, juiced
- 1/2 tbsp sweet chilli dipping sauce
- 1/2-1 tbsp Tabasco® Red
- Small bunch coriander, finely chopped
- For the mango salsa
- 2 medium ripe mangos, skinned and stoned
- 1 red onion
- 3 tbsp coriander, chopped
- 3 tsp Tabasco® Red
- 1 lime, juiced
In a large non-stick frying pan, wipe the base with a little oil using a piece of kitchen paper. Set over a medium to high heat.
Place a tortilla in the base of the pan and scatter over 1/4 spring onions. Dot a generous amount of Tabasco® sauce in between the spring onions over the surface of the tortilla. Then scatter a generous layer of cheese over the top of this. Continue to heat until the cheese starts to melt.
Once starting to melt and the tortilla is starting to brown on the base, place a second tortilla over the cheese and press down. Flip over and continue to cook the tortilla until golden and crispy.
Cut into 8ths and rest for 30 seconds to a minute before serving. Repeat until the ingredients are finished.
*Each of the Tabasco® flavours will give a different result. For a heat add splash the Original Tabasco® red. Use approx 6 shakes. For a deep smoky flavour add Chipotle liberally or for a gentle heat add Green liberally.
For the guacamole, mix all the ingredients together, until a chunky dip is formed.
