It’s time to meet your latest food obsession. Say hello to puffles, bubble egg waffles, egg puffs or any other cute name that takes your fancy. Their Cantonese name is gai daan jai, which translates as ‘little chicken egg’ – a perfectly-fitting description for these bubbly, honeycomb-like waffles.
Bubble egg waffles have long been a popular street food snack sold by hawkers all over Hong Kong. They are made by pouring a sweet egg-based batter into a special waffle iron with spherical cells as opposed to the traditional grid-shaped waffle irons we’re used to.
Today they’re being re-imagined in ways you won’t believe are real. It all started with California’s Cauldron ice cream parlour creating the ‘puffle cone’ – an egg waffle shaped into a cone, filled with ice cream and topped with enough candies and syrups to fuel a Mad Hatter’s tea party for hours on end.
These bubble waffle cones are now available in stores around the world, including Wowfulls, Eggloo and Eggettes in NYC, and London’s very own Nosteagia, where you can indulge in waffle cone flavours like Peanut Coco Pops, Mr. Oreo, Queen Berry and Bananarama.
