A. Giblets are the liver, gizzard, heart and neck of poultry like turkey and chicken. Use all giblets except liver to make a delicious gravy for your roast. Liver is not usually used as it can make the gravy bitter. However, when sautéed with onions or shallots, chopped liver makes for a lovely stuffing.
