No-Cook, Sugar-Free Blueberry and Chia Seed Jam
- 375g blueberries
- 4 tsp stevia (a natural sweetener available in the sugar aisle of big supermarkets)
- Juice and zest of 1 lemon
- 30g chia seeds (available in health food shops)
Serves: Makes one 0.5L jar
Blend the blueberries to a smooth purée and add the lemon juice and zest.
Place the chia seeds in a large bowl and mix in the stevia and blueberry purée
Cover and leave in the fridge for 2-3 hours. This will reconstitute the chia seeds so they're nice and plump.
Place the chia seed mixture in a blender and pulse until slightly smooth. It's okay if it's not a totally smooth paste.
Sterilise a 0.5L clip top Kilner jar using these handy instructions for sterilising jars properly. This will make your jam last longer.
Store the jam in the fridge and use within 4 days.
