Creamy banana ice lollies
- 2 medium bananas, very ripe
- 120ml double cream
- 475ml milk
- 65g caster sugar
- Special equipment: 145ml paper cups
- Wooden ice cream sticks
Serves: 12 lollies1) In a large bowl, mash the bananas very well with a potato masher or a sturdy whisk until almost lump free. You should have about 225g mashed. Whisk in remaining ingredients until fully incorporated.
2) Pour the mixture evenly into paper cups, and freeze for 1 hour so the ice lolly is firm but not frozen through. Remove from the freezer and insert a wooden stick in the centre of each ice lolly. Return to the freezer and freeze until solid, about 2 to 3 hours. To serve, peel the paper cups away and eat immediately.
