Braised Red Cabbage

- 2 tablespoons unsalted butter
- 1 cup diced onion
- 1/2 head red cabbage, cored and sliced
- 1 coarsely grated apple
- 3 tablespoons red wine vinegar
- 3 tablespoons sugar
- 1/2 cup apple cider
- 1/4 teaspoon ground nutmeg
- Salt and pepper
Melt the butter in a heavy-bottomed saucepan and cook the onions until translucent.
Add the cabbage, apple, vinegar, sugar, apple cider and nutmeg and simmer, covered, for 15 minutes until the cabbage is tender. Season to taste and serve.
