The Lady's Warm Potato Salad

- 8 medium red potatoes
- 20g chopped fresh parsley leaves
- 30g chopped spring onion tops
- 2 celery sticks, chopped
- 3 hard-boiled eggs, chopped
- Half a small pepper, chopped
- 20g diced pimento
- 1 tsp lemon-pepper seasoning
- 2 tbsps salt
- 1 tbsp dijon mustard
- 50ml mayonnaise
- 200ml sour cream
1) Boil potatoes with skins for 10-15 minutes, until tender. Let cool just to the touch and cut into cubes.
2) In a large bowl, combine remaining ingredients. Add potatoes.
3) Mix gently and serve at room temperature.
