Mediterranean Salmon with Extra Virgin Olive Oil
This juicy salmon is packed with fresh flavours and is perfect with roasted veg.
- 1 sachet of Knorr Gourmet Mediterranean Salmon with Extra Virgin Olive Oil and a pinch of oregano
- 4 salmon fillets
- 200g courgettes
- 200g red pepper
- 100g cherry tomatoes
- 1 tablespoon vegetable oil
Pre-heat oven: Gas Mark 7 for gas oven/200°C for fan oven/200°C for conventional oven.
Place the vegetables with oil and seasoning mix in a bowl and coat.
Lay foil pouch flat on a baking tray so opening is facing you and insert fresh ingredients, placing the fish on top of the coated vegetables.
Fold over the open foil edge twice (approx 2cm) to close the pouch.
Place tray in oven and cook for: 20–25 minutes in a gas oven (middle shelf)/20–25 minutes in a fan oven (middle shelf)/30–35 minutes in a conventional oven (2nd from top shelf). Ensure there is enough room for foil to expand. Carefully cut open the bag (attention: hot steam); check fish is fully cooked before serving.
Serve with creamy mashed potato.
