Quick and easy cranberry sauce with spices and fresh citrus.
- 1 large onion, finely chopped
- 25g butter
- 450g fresh cranberries
- Grated zest and juice of 1 medium orange
- 75g light brown sugar
- ¼ tsp ground cinnamon
- Pinch of ground cloves
- 2 tablespoons port
Place onions and butter in a saucepan and cook gently for 5 minutes. Add the cranberries and the orange zest and juice – cook until the cranberries have popped and cooked down.
Add the sugar, spices and port and cook gently for a further 10 minutes. This can be served a room temp or warm and freezes brilliantly!
