Baked sweet potato wedges

  • 115g, plus 25g, butter
  • 1 1/2 tsps ground cinnamon
  • 4 sweet potatoes, scrubbed, cut lengthwise into wedges
  • 2 tsps salt
  • 2 tsps freshly ground black pepper
1) Preheat the oven to 200C/Gas 6.

2) In a large saucepan over medium-high heat, melt the butter. Remove the pot from the heat and stir in the cinnamon. Add the potato wedges to the butter and toss to combine. Season the potatoes with the salt and pepper.

3) Spread the potatoes in an even layer on a baking sheet. Roast the potatoes, stirring occasionally, until tender, about 20-25 minutes.

Remove the potatoes from the oven to a serving dish and serve.
