Melt the butter in a large saucepan. Add the apples and cook until just soft, turning frequently. Turn off heat, add the brown sugar, cinnamon and nutmeg. Toss to cover apples.
For the chocolate syrup:
Bring the water to a boil. Mix sugar and chocolate together in a bowl, add water and mix.
For the wet walnuts:
Put walnuts into a bowl and add simple syrup (recipe follows), to taste.
For the simple syrup:
Combine water and sugar and heat until sugar dissolves;cool.
Serve the warm apples over vanilla ice cream. Top with banana, your choice of toppings, nuts, chocolate syrup, wet walnuts, whipped cream, and finish with a cherry.
