Beef Salad with Mint Dressing

  • ½ cucumber
  • 1 red onion, thinly sliced
  • ½ x 400g pack beansprouts by Sainsbury’s
  • ½ x 400g pack beansprouts by Sainsbury’s 200g pack trimmed mange tout by Sainsbury’s, sliced
  • 100g radishes, sliced
  • 300g cooked beef, thinly sliced (rare is best)
  • Zest of 1 lime, and juice of 2
  • 2 tsp Fairtrade white caster cane sugar by Sainsbury’s
  • 2 tbsp light soy sauce by Sainsbury’s
  • ½ red chilli, finely chopped, optional
  • ½ x 28g pack mint by Sainsbury’s, leaves only, shredded

Using a vegetable peeler, pare the cucumber into long strips, discarding the seedy middle.

Place in a large bowl with the onion, beansprouts, mange tout and radishes. Toss together, add the beef and toss again.

In a small bowl, combine the lime zest, juice, sugar and 1 tablespoon water and mix until dissolved. Add the soy sauce, chilli and mint, and mix again.

Drizzle over the salad and serve.This recipe provides 3 of your 5 a day.
