Beetroot and rocket salad with buttermilk-blue cheese dressing

  • 400g fresh rocket
  • 150g sliced cooked beetroot
  • 325g tinned mandarin oranges, drained
  • 150ml lowfat buttermilk
  • 35g crumbled blue cheese
  • Salt and freshly ground black pepper
1) Arrange the rocket on a serving platter. Top with sliced beetroot and mandarin oranges.

2) In a small bowl, combine the buttermilk and blue cheese. Mix until blended and season, to taste, with salt and black pepper. Pour over the salad and serve.
