Big Daddy's seasoned wedged chips

  • For the chips
  • 6 potatoes, wedged
  • Peanut oil, for frying
  • Chips seasoning (recipes follow)
  • For the dry porcini seasoning
  • 1 tsp. dry porcini mushrooms, ground
  • 1 tsp. coarse sea salt
  • 1/2 tsp. black pepper
  • 1/8 tsp. dry mustard powder
  • 1 tsp. sherry vinegar
  • For the dill lemon zest seasoning
  • 1 tsp. freshly chopped dill leaves
  • 2g lemon zest
  • 1 tsp. sea salt
  • 1/2 tsp. coarse black pepper
  • For the smokey paprika seasoning
  • 1 tsp. smoked paprika
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1 tsp. freshly chopped parsley leaves
For the chips:

1) Heat deep-fryer with peanut oil to 180C.

2) Fry potatoes in a deep-fryer until golden brown and tender. Approximately 6 minutes. Toss in a large bowl with seasoning and serve immediately.

For the seasonings:

While your chips are frying, combine the ingredients for your choice of seasoning in a large bowl and set aside until chips are ready.
