Big Daddy's seasoned wedged chips
Ingredients
For the chips:
- 6 potatoes, wedged
- Peanut oil, for frying
- Chips seasoning (recipes follow)
For the dry porcini seasoning:
- 1 tsp. dry porcini mushrooms, ground
- 1 tsp. coarse sea salt
- 1/2 tsp. black pepper
- 1/8 tsp. dry mustard powder
- 1 tsp. sherry vinegar
For the dill lemon zest seasoning:
- 1 tsp. freshly chopped dill leaves
- 2g lemon zest
- 1 tsp. sea salt
- 1/2 tsp. coarse black pepper
For the smokey paprika seasoning:
- 1 tsp. smoked paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. black pepper
- 1 tsp. freshly chopped parsley leaves
Method
How to make Big Daddy's seasoned wedged chips
For the chips:
1) Heat deep-fryer with peanut oil to 180C.
2) Fry potatoes in a deep-fryer until golden brown and tender. Approximately 6 minutes. Toss in a large bowl with seasoning and serve immediately.
For the seasonings:
While your chips are frying, combine the ingredients for your choice of seasoning in a large bowl and set aside until chips are ready.
