Black-eyed pea salad

  • 180ml oil
  • 50g granulated sugar
  • 60ml balsamic vinegar
  • 1 (425g) tin black-eyed peas, drained, rinsed
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 50g diced spring onions
  • 1 large tomato, diced
  • 15g freshly chopped parsley leaves
  • 10g mixed freshly chopped thyme and oregano leaves
1) In a small bowl, whisk together the oil, sugar and vinegar.

2) In a large bowl mix together the salad ingredients. Pour the dressing on top of salad, mix well and serve.
