Blackberry shakes

  • 1 punnet (450-500g) fresh blackberries
  • 30 to 60g tablespoons sugar (depending on berries sweetness)
  • 500 to 600ml vanilla ice cream
  • 370ml pomegranate juice
  • 250ml milk
1) Combine all but a few blackberries and sugar in a small saucepan and cook over high heat until the sugar has melted and the berries are soft and just starting to break down.

2) Put the cooked berries, the ice cream, pomegranate juice and milk in a blender and puree until thick and creamy. Pour into tall glasses and garnish each glass with a few berries.
