Blueberry Sauce

  • 450g fresh blueberries, rinsed
  • 200g vanilla granulated sugar
  • 240ml water
  • 15ml fresh lemon juice
1) Combine the blueberries and vanilla granulated sugar in a large saucepan. Add water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 mins, or until the mixture begins to thicken.

2) Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.
