  • 70g wholemeal flour
  • 70g rye flour
  • 70g cornmeal
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp freshly ground allspice
  • 170g molasses, by weight
  • 240g buttermilk
  • 1 tsp vanilla essence
  • 1/2 tsp orange zest
  • Special equipment: 2 empty (750g) metal cans
