Brandied prawns

Ingredients

  • 30g unsalted butter
  • 15ml extra-virgin olive oil
  • 3 garlic cloves, finely minced
  • 500g medium prawns, peeled and deveined
  • 10ml Worcestershire sauce
  • 1/8 tsp hot sauce
  • Salt and fresh black pepper
  • 120ml tomato ketchup
  • 1 tbsp chopped fresh oregano leaves
  • 30ml brandy
  • 2 tbsps chopped flat-leaf parsley

Method

How to make Brandied prawns

1) Melt the butter with the olive oil in a large frying pan over medium heat. Add the garlic and cook until it is fragrant, about 1 to 2 minutes, stirring often.

2) Stir in the prawns, Worcestershire sauce, hot sauce, salt and pepper and let the mixture simmer until the prawns are partially cooked through and beginning to curl, about 2 minutes.

3) Stir in the ketchup and the oregano and simmer until the prawns are opaque and just cooked through, 2 more minutes.

4) Add the brandy and parsley, stir to combine, remove from the heat and serve.
