- 170 g noodles
- 1 cup carrots
- 1 cup courgette
- 1 cup pumpkin
- 2 egg
- 0.50 cup sour cream
- 0.50 cup natural yoghurt
- 0.50 cup cheddar cheese
Method
How to make Budget Busting Vegie and Noodle Cups
- Preheat oven to 180 degrees celcius. Lightly spray a texas-size muffin tray (1 cup volume moulds).
- Cook noodles as directed on packet, reserving flavour sachets. Drain and rinse under cold water. Place in a mixing bowl.
- Add remaining ingredients, except cheese, and stir well.
- Spoon into muffin pans. Top with cheese and bake for 30-35 minutes until set.
