  • 170 g noodles
  • 1 cup carrots
  • 1 cup courgette
  • 1 cup pumpkin
  • 2 egg
  • 0.50 cup sour cream
  • 0.50 cup natural yoghurt
  • 0.50 cup cheddar cheese

How to make Budget Busting Vegie and Noodle Cups

  • Preheat oven to 180 degrees celcius. Lightly spray a texas-size muffin tray (1 cup volume moulds).
  • Cook noodles as directed on packet, reserving flavour sachets. Drain and rinse under cold water. Place in a mixing bowl.
  • Add remaining ingredients, except cheese, and stir well.
  • Spoon into muffin pans. Top with cheese and bake for 30-35 minutes until set.
