Buffalo-style beef tacos (kids in the kitchen)

Ingredients

  • 1 tbsp vegetable oil
  • 500g beef mince
  • 60ml cayenne pepper sauce for buffalo wings
  • 8 taco shells
  • 200g thinly sliced lettuce
  • 60ml reduced-fat or regular prepared blue cheese dressing
  • 100g shredded carrot
  • 110g chopped celery
  • 2 tsps coriander seeds

Method

How to make Buffalo-style beef tacos (kids in the kitchen)

1) Brown beef mince in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into small crumbles. Pour off drippings, if necessary.

2) Stir in cayenne pepper sauce. Cook and stir 1 minute or until the sauce and meat are heated through.

3) Meanwhile heat taco shells according to package directions.

4) To serve, evenly spoon beef mixture into taco shells. Add lettuce and drizzle with blue cheese dressing. Top evenly with carrot, celery and coriander seeds.

Cook's Note: 60ml prepared ranch dressing combined with 2 tbsps crumbled blue cheese may be substituted for the blue cheese dressing.
