1) Cut the tips off the wings and discard. Cut remaining chicken wings in half at the joint. Meanwhile, heat the frying oil.
2) Deep fry wings in about 2 inches of oil in skillet until done. Drain on paper towels.
3) Melt butter and hot sauce together. Dip fried wings into the sauce. Serve with a spicy blue cheese dip or dressing and celery sticks.
For the spicy blue cheese sauce:
In a small bowl mix together all ingredients. Serve with chicken wings.
