Ingredients

  • 1 (300g) package frozen corn kernels, thawed
  • 2 (450) tins black beans or white kidney beans, drained, rinsed
  • 1 large red pepper, stemmed, seeded, diced
  • 1/2 small fresh jalapeno chilli, stemmed, seeded, minced
  • 1/2 cup firmly packed fresh coriander leaves, chopped
  • 60ml freshly squeezed lime juice
  • 2 tbsps vegetable oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

Method

How to make Calypso corn

1) Combine the corn, beans, red pepper, jalapeno chillies, coriander, lime juice, oil, sugar, salt and pepper in a large bowl.

2) Taste and adjust the seasonings. Cover and chill for 1 hour or overnight to combine the flavours.
