Calypso corn
Ingredients
- 1 (300g) package frozen corn kernels, thawed
- 2 (450) tins black beans or white kidney beans, drained, rinsed
- 1 large red pepper, stemmed, seeded, diced
- 1/2 small fresh jalapeno chilli, stemmed, seeded, minced
- 1/2 cup firmly packed fresh coriander leaves, chopped
- 60ml freshly squeezed lime juice
- 2 tbsps vegetable oil
- 1 tsp sugar
- 1 tsp salt
- 1 tsp freshly ground black pepper
Method
How to make Calypso corn
1) Combine the corn, beans, red pepper, jalapeno chillies, coriander, lime juice, oil, sugar, salt and pepper in a large bowl.
2) Taste and adjust the seasonings. Cover and chill for 1 hour or overnight to combine the flavours.
