Captain Kofi's candlelight catfish

Ingredients

  • 1 whole catfish (500g to 1kg), or 4 catfish steaks (about 3cm thick)
  • 6 tbsps olive oil
  • 120ml fresh lemon juice
  • 100g Italian seasoning
  • 1 tsp seafood seasoning (recommended: Old Bay)
  • 1/2 tsp ground cumin
  • 1 tbsp hot curry powder
  • 1/4 tsp cayenne pepper, or to taste
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp toasted fennel seeds
  • 120ml soy sauce

Method

How to make Captain Kofi's candlelight catfish

1) Clean the fish, leaving bone in. Drizzle the fish with lemon juice and olive oil.

2) Combine all the seasonings, spices, olive oil and soy sauce to make a rub. Scatter the rub over the fish and sprinkle with soy sauce. Let marinate, covered, overnight in the refrigerator.

3) Preheat the barbecue to medium.

4) Arrange the fish on the barbecue and cover with foil. Cook for 15 minutes. Using a broad spatula, carefully turn the fish over and continue to barbecue, covered, for 20-30 minutes.

Transfer the fish to a serving platter and serve.
