Carrot, courgette and squash ribbons

Ingredients

  • 2 large carrots, peeled
  • 3 large courgettes, peeled
  • 3 large yellow squash, peeled
  • 25g butter
  • 2 cloves garlic, minced
  • 2 tbsps minced fresh parsley leaves
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 lime, juiced

Method

How to make Carrot, courgette and squash ribbons

1) Cut carrots, courgette and squash into thin ribbons with a mandoline slicer.

2) In a large skillet, melt butter over medium-high heat. Add garlic and cook for 2 minutes. Add carrot ribbons. Toss in courgette and squash ribbons, salt, pepper, parsley and lime juice. Cook for 6 to 10 minutes.
