1. Heat the oil in a large heavy based pan and fry the bacon lardons for 2-3 minutes, until crispy. Add the roasted garlic paste, onion and carrot, and fry for another 2 minutes at high heat.
2. Push the mix to one side of the pan, add the sausage pieces and fry for 2 minutes, until browned.
3. Add the cannellini beans, chopped tomatoes, wild mushroom stock and Dried Herbs de Provence. Half fill the empty cannellini bean tin with water and add to the pan. Stir everything together and simmer on a low heat for 10-15 minutes until the sausages are cooked through.
4. Serve in bowls with the optional parsley sprinkled on top and crusty bread on the side.
