Chicken South Indian style
Ingredients
- 2 tbsp grapeseed oil
- 15g chopped garlic
- 35g chopped ginger
- 1 medium red onion, chopped
- 1 tbsp sambar powder
- 10g dried curry leaves
- 1 tbsp brown mustard seeds
- 1 tsp turmeric
- 1 tsp asafoetida
- 1 tsp red chilli powder
- 2 boneless and skinless chicken breasts, cut into cubes
- 1 tomato, chopped
- Pinch of salt
- 250ml coconut milk
- 250ml water
- Few sprigs coriander
Method
How to make Chicken South Indian style
1) Place the oil in a large skillet over a medium-high heat and then add garlic, ginger and onion. Cook for 3 to 4 minutes, until the onions are soft and golden.
2) Add the spices to the pan, turn the heat down to medium and cook for 1 minute. Stir in the chicken and cook for 3 minutes, stirring constantly.
3) Add the tomato, salt, coconut milk and water and cook until chicken is done, about 8 minutes. Stir in coriander sprigs and serve.
