Chilled yoghurt soup

  • 10g chopped mint
  • 5g grated ginger
  • 500g natural yoghurt
  • 250ml vegetable stock
  • 1 tbsp tamarind pulp
  • 1 tsp ground cardamom
  • 1 tsp paprika
  • 1 tsp coriander powder
  • Pinch of salt
1) Whisk everything together in a bowl and then place in the refrigerator for at least one hour.

2) Spoon into bowls and serve chilled.
