Chocolate ganache

  • 350ml double cream
  • 350g plain chocolate, chopped

Serves: enough to cover 1 (23cm) cake

1) Place the chopped chocolate into a large bowl. In a heavy saucepan heat the cream until it just begins to simmer.

2) Pour the cream over the chocolate. Stir until all of the chocolate has melted. The ganache is ready to pour.
