Ingredients
- 100g sugar
- 100g brown sugar
- 120g unsalted butter, room temperature
- 120g creamy peanut butter
- 1 tsp vanilla essence
- 1 egg
- 150g plain flour
- 1 tsp bicarbonate of soda
- 1/4 tsp salt
- 150g butterscotch chips
- Granulated sugar, for topping
- Chocolate sauce, for dipping
Method
How to make Chocolate peanut butterscotch biscuits
1) Preheat the oven to 190C/Gas 5. In a large bowl, combine the sugar, brown sugar and butter. Beat with an electric hand mixer until fluffy.
2) Add the peanut butter, vanilla and egg, and blend well. Add the flour, bicarbonate of soda and salt and mix well to make a dough mixture. With a wooden spoon or rubber spatula, stir in butterscotch chips.
3) Take small dollops of dough and shape, with your hands, into 2.5cm balls. Place 5cm apart on prepared baking sheets; make sure that the biscuits are at least 5cm away from each other because they will spread.
4) Dip a fork into the sugar and flatten the balls lightly in a crisscross pattern, dipping into the sugar again regularly. Bake the biscuits for 6 to 9 minutes, or until golden brown.
5) Remove the biscuits from the baking sheet immediately and place on wire racks to cool thoroughly. After the biscuits have cooled, dip in the chocolate sauce.
