2) Combine the brown sugar, Italian seasoning, onion powder, cocoa powder, garlic powder, paprika, red pepper, cumin, salt and black pepper together in a large bowl.
3) Rub the mixture evenly over pork chops.
4) Pour the oil into a large oven-proof frying pan set over a medium-high heat. Add the pork chops and cook for 3 minutes per side.
5) Transfer the frying pan to the oven and bake the pork chops for about 3 minutes, until cooked through.
Remove the pan from the oven, lift the chops onto a serving platter and serve at once.
