Citrus slaw

  • 60g orange marmalade
  • 1 lemon, juiced
  • 1 lime, juiced
  • 2 to 3 tsp hot sauce
  • 60 to 85ml extra-virgin olive oil
  • 500g bag of shredded coleslaw mix
  • Salt and freshly ground black pepper
1) Remove metal top from jar and loosen the marmalade up in microwave 15 seconds.

2) Spoon loosened marmalade into a bowl then whisk in lemon and lime juice, hot sauce and olive oil.

3) Toss coleslaw mix with dressing and season with salt and pepper; serve.
