Coconut prawns

  • 1 tin unsweetened coconut milk
  • 3 Thai bird chillies, minced
  • 2 tbsp minced garlic
  • 2 tbsp chopped coriander
  • 2 tbsp lime juice
  • 900g large prawns, heads on
  • Salt and freshly ground black pepper
1) Combine the coconut, chillies, garlic, coriander and lime juice in a shallow dish. Marinate prawns in mixture for 30 minutes.

2) Season with salt and pepper and barbecue about 3 minutes on each side, or until just cooked through.
