Cowboy biscuit

  • 200g lard
  • 200g caster sugar
  • 200g brown sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 300g plain flour
  • 1 tsp bicarbonate of sode
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 400g rolled oats
  • 75g chopped pecans
  • 200g pack chocolate chips
  • 75g dessicated coconut
1) Preheat oven to 180 degrees C.

2) In a large bowl, with an electric mixer, cream the lard, caster sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, bicarbonate of soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined.

3) Spoon mixture onto greased foil lined biscuit tray. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

4) Serve warm or allow to cool completely.
