Cowboy cookie
Ingredients
- 225 g shortening (recommended: Crisco)
- 225 g caster sugar
- 225 g brown sugar
- 2 eggs
- 1 tsp vanilla essence
- 450 g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- 450 g rolled oats
- 115 g chopped pecans
- 1 (170 g) package chocolate chips
- 115 g dessicated coconut
Method
How to make Cowboy cookie
1) Preheat oven to 180C/gas mark 4.
2) In a large bowl, with an electric mixer, cream the shortening, sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined.
3) Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.
