1) For the dressing place 3 tablespoons of olive oil, the sesame oil, soy sauce, vinegar and honey in a bowl and whisk together. Check seasoning and adjust if needed. Then mix in the cranberries and blueberries.
2) Heat a wok until hot and then add the remaining oil. Stir-fry the gammon strips for 8-10 minutes until lightly browned and crispy.
3) Arrange the gammon on the lettuce, drizzle with the dressing and top with a fried egg.
