Cucumber Raita

Ingredients

  • 1 cucumber, grated
  • 350ml Greek yoghurt
  • 1/4 a bunch mint, leaves picked and finely chopped
  • 1 1/2 tsp cumin seeds, roasted and ground to a powder
  • 1/2 lemon, juiced
  • Salt, to season

Method

How to make Cucumber Raita

Once the cucumber has been grated, squeeze it to remove as much liquid as possible. Place into a bowl and add the remaining ingredients.

Season with salt to taste, mix well and serve immediately.
