Ingredients

  • 190g ground almonds
  • 200g granulated sugar
  • 2 eggs
  • 1 lemon, zested
  • 1 tsp baking powder
  • 5g unsalted butter, room temperature
  • 125g icing sugar, for dusting

Method

How to make Desert rose

1) Preheat oven to 180C/Gas 4.

2) In a large bowl, mix all the ingredients together except for the icing sugar. Roll the dough into 2 1/2cm balls and place on a cookie sheet. Press down with a knife to make slits like a triangle in the cookie. Using the end of the knife, press the centre of the cookie downward. Bake for 8 to 10 mins. Let cool and then dust with icing sugar.
