  • 625g fingerling potatoes, rinsed but not peeled
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 tbsp fresh dill, chopped

Method

How to make Dill fingerling potatoes

1) Melt the butter in a large, heavy-bottomed saucepan.

2) Add the potatoes, salt, and pepper, and toss well. Cover the pan tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a fork. From time to time, shake the pan without removing the lid to prevent the bottom potatoes from burning.

3) Turn off the heat and allow the potatoes to steam for 5 minutes. Don't overcook!

4) Add the dill to the pan, toss, to coat the potatoes and serve hot.
