2) Preheat the griddle over medium-high heat.
3) Whilst the griddle is heating, mix the butter, rosemary and coriander together and portion into 4 (60g) servings.
4) Rinse the salt from the steak and pat completely dry.
5) Rub garlic onto both sides of the steaks.
6) Place the steaks in the pan and cook each side for 5 minutes or until cooked to taste.
7) Transfer to warmed serving plates and add the butter topping.
