Duck fat potatoes
Ingredients
- 4 medium maris piper potatoes, peeled
- Salt
- 475ml duck fat, melted
- Maldon salt flakes
Method
How to make Duck fat potatoes
1) Put the potatoes in a saucepan, cover with water and liberally add salt. Bring to the boil and then reduce the heat to simmer gently until the potatoes can be easily pierced with a skewer.
2) Drain thoroughly and allow to cool. When cool enough to handle, score the potatoes with a fork.
3) In a frying pan, bring the duck fat to the smoking point and add the potatoes. Do not move the potatoes until a golden crust has formed. Gently turn the potatoes to crisp them on all sides.
4) Transfer to a plate and season with Maldon salt.
