Remove slightly the fat of the duck breasts/fillets and cut into cubes.
Fry the duck over a high heat and then add the cashew nuts.
Chop the coriander.
Wash the soya beans and mix with the coriander, beansprouts, sesame seeds, fleur de sel and the cashew nuts. Add a trickle of olive oil.
Skewer the meat onto kebab sticks and arrange on a plate. Serve with the soya bean salad, sesame cream and a squeeze of lime.
