Eda'mole
Ingredients
- 1 tbsp wasabi powder
- 2 tbsp water
- 225g frozen shelled edamame (green soy beans)
- 1 ripe Hass avocado
- 1 tbsp peeled fresh ginger, finely grated
- Juice of 1 lime, (about 3 tbsp)
- 1 1/2 tsp salt
- 4 spring onions (white and green), finely chopped
- 15g fresh coriander leaves, finely chopped
Method
How to make Eda'mole
1) Whisk the wasabi and water in a small bowl to make a thick liquid; cover and set aside.
2) Boil the beans in lightly salted water, for about 4 minutes until tender, or microwave, covered, for about 2 minutes.
3) Halve and seed the avocado. Scoop the flesh from into the bowl of a food processor. Add the wasabi paste, edamame, ginger, lime juice, and salt and mix until smooth.
4) Transfer to a serving bowl. Stir in the spring onions and coriander and serve with a selection of crudites.
